Thierry Farges, President of M.A.D. foods is simply mad for butters, rendered duck fat, scaisssion and hunting truffles in the Dordogne, France.  He is a master of creating flavors to die for, one so tasty I decided to write my first blog about him and what he does.  The culprit that is keeping me up writing this tome late into the night is his Red Wine Shallot Butter under the Aux Delices des Bois label.  I thought I was in heaven as the scent wafted from my oven.
